Smoked Chuck Roast

So I picked up a chuck roast today and decided to smoke it. :silly: Turned out awesome. I just kinda made it up as I went along ;)
Here it is going on the egg with some bacon on top. :whistle:

Here is the roast after about 5 hours of smoke :cheer:

I then put it in the good old dutch oven with some diced tomatoes and hot sauce, :evil:

Here it is on the plate with some of the wifey's horseradish red potatoes and fresh asparagus :woohoo: :whistle:

The entire family had seconds. :P I think we have a new favorite. ;)B)

    yes I cooked it at about 225-230 for the first 5 hours and then, Once it went in the DO I bumped it up to 250-275. I used some maple chunks and It was fantastic. :laugh:

    are you going to share the horseradish taters recipe?? i will make them but the family will not eat them.. is there a way to make a single serving?.... who am i kidding????? how about a triple serving? my servings are usually double and i will go back for thirds (which is usually a single serving :laugh: )

    :laugh: :laugh: It is funny you say that, my kids won't eat them either, we made plain mashed taters for them, but for us(the wife and I) we made these. As far as the recipe....Well it is actually Rachel Rays and they are awesome. We used:
    4 red potatoes
    1/2 cup sour cream
    2 tablespoons of chopped fresh chives
    1 tablespoon of horseradish
    You can add more or less as you like ;) Basically you cut potatoes in the quarters, boil for about 12 minutes until tender, then mash with the other stuff. They are fantastic :whistle:;)B)

    Sounds like a great way to cook one of my least favorite cuts of meat. Always dry and with out much flavor. The tomatoes and hot sause sounds like it perked it right up. Great idea and looks great! ;)

    Great looking cook! I was also looking over the chuck roasts at the store yesterday, while shopping for a pork loin.

    About how long did you keep it in the D.O.?
