I decided to try some wings today. After searching the forum for wing-stuff, we went to Sam's Club and purchased a big bag full of them.
Then we:
rubbed with John Henry Hot Wing Rub
got the egg to 325°
used cherry wood
achieved a raised grid using "the rig"
cooked direct and turned every 15 minutes for an hour.
We wound up with the most incredible wings we've ever had. They are so much better than yuppy restaurant fare. The wife just about ate herself sick...I'm so proud I just had to post this.
Then we:

Glad to hear they turned out great. You will be glad you got a big bag. The one I got from Costco was 10 pounds, I will be doing some more tomorrow.

Did you like the JH Wing Rub? I had some but found it a bit on the salty side. -
With all that heat on it, I didn't even notice salt at all, but it sure was good. I might try to find something a little more "spice-wussy" next time. The wife can eat JH with a spoon.

They were great, I have another batch in the fridge marinading but I did add a couple more things (like a beit of maple syrup and more hot sauce sauce and more red chile flakes) as I like heat.

We had wings tonite using Fidel's Marinateed wing receipt, dipped them with Big'un's Carnivore Robust, The family almost fought over them. I had forgot how to post a pic so forgive me is this fails
