Beans, Beans, good for your heart...

I am soaking another pan full of beans and re-try a pot of baked beans on the egg. 3 cups of great northerns, 1 tbsp baking soda, water to cover.[p]Tomorrow I'll drain, rinse, and bring to a boil then simmer until they are fairly close to a soft & mushy state. Then, the goodies.[p]Wish I had a camera to share a before & after. [p]Banker John

    They have been boiling for 1.5 hours and are just at the point of splitting and mushy. Goin outside to fire up the egg. I think I'll smoke with apple wood.[p]Banker John

    Sounds like you're on a roll this time, let us know how they come out.[p]I'm still eating mine, warmed up some tortillias last night and made bean stew taco's, wished I had some shredded lettuce and avocado. Maybe next time.[p]Have a great weekend,

    OOOooooohhhh boy! The egg strikes again![p]I got the consistency part down perfect now. I put in more baking soda for the overnight soak and cooked the beans a wee bit longer (about 25 minutes past when I thought they were done.[p]My next pursuit is the right proportions of ingredients. This time I put in a pinch of red pepper (made for difficulties this AM :) I also put in some molasses which made a very bitter flavor in the end product. During the smoke process, I tasted them and tried to overcome the bitter by adding honey. The end result was a very sweet (too sweet) pot o beans; almost candied. The ham tasted wonderfully sweet![p]I think next time, cut out the pepper, add chili powder instead of red pepper and add a few pieces of carmel. Why carmel? Hey, it's in Bush's ingredients list.[p]I appreciate all the encouragement through the process.[p]Banker John[p]
