Recipe for Haddock

Need a good but simple and quick recipe for haddock.

    Lightly oil..S&Lemon pepper..other spices you may like..on top of a cedar plank and in th BGE..along with a nice glass or 2 or 3 :whistle: of Kim Crawford Sauvignon Blanc

    I just bought haddock for dinner tonight!

    I usually saute` in butter and olive oil, and a little bit of salt and pepper. Too much seasoning and you lose the flavor of the fish. I cook it in a stainless or cast iron skillet and then make a simple pan sauce. Shallots, white wine, juice from 1/2 lemon. Reduce by 2/3, then quickly stir in a little crean or half&half to thicken. Toss in a little chopped parsley and spread over fillets.

    Another great method is to poach in parchment paper. Salt and pepper, thinly sliced onion, thinly sliced lemon, well-drained chopped tomatoes, little fresh basil, wrap it all up and bake or Egg for 20-30 minutes at 350.

    I've Egged them on a non-stick sheet with a variety of DP rubs or some lemon pepper. Brush with evoo first.

    Of course, there is always breaded and fried...

    Damn, now I gotta figure out what I want to do, too!
