I use a grill extender and go direct for 30 minutes at 350. Yummmmmmmmmmmmmmmmmmy stuff!

I fix mine pretty much the way Boccie does and use little cocktail sausages for the meat, then cook direct over a hot but controlled fire for about 25 to 30 minutes. I close the lid as much as possible to smoke them and turn them over a few times during the cook. Depending upon the quality of the jalapenos they always come out fantastic or better. My 92-year-old mother-in-law takes some back to her nursing home room to nibble on, so they must be good.[p]Here's what mine look like on the grate.[p]Spring Chicken
