Tuna Steak Marinade?

The local grocery chain has tuna steak on sale this week. I picked one up for dinner a couple of days ago. I let it sit in my standard seafood marinade (fresh lemon, olive oil, garlic, salt pepper) for about an hour in the fridge and grilled it. It was good, but it tasted mainly like lemon. Does anyone have some marinade ideas for tuna steak? I might have to try it again this weekend.

    Try this one from AB's 'Good Eats'.[p]The key is to barely sear it over a HOT fire. Should be rare in the middle. AB uses rectangular pieces of tuna, about 1.5" sq. Ask the fish guy to cut you one direct from a whole loin. This guaruntees it is fresher as well.[p]Good Luck!

  • BluesnBBQ,[p]Perhaps by marinating your steak it was over-flavored. Ahi needs very little embellishment; just salt and pepper works great. Cook it only until it’s just seared on the outside and almost raw in the middle, so use your highest heat. A white-hot cast-iron skillet works great. Serve Ahi with a dab of wasabi paste, a little dish of soy, and pickled ginger. One favorite Hawaiian way is to spoon Ponzu sauce over Ahi after it is cooked. Ponzu sauce recipe: Reduce 1 c mirin to 1/3 c. Add mirin to bowl along with 3/4 c low sodium soy, 3 T lemon j, 1 t red pepper flakes.

    BluesnBBQ, warm up some crushed tomatoes basil and lemon juice and pour on the grilled tuna steak after grilling then serve. most marinades over power the tuna steak.[p]

    QBabe, how did you use the wasabi sauce? On top or as a side?

  • I love garlic and lemon, but I have learned not to use them with tuna steaks. The other advice here is right -- tuna does not need much seasoning.[p]Char Dawg

  • Char Dawg,[p]The best I have found is to take whole corriander seeds and put them in a small pan with some oil and heat the pan, this will "roast" the corriander. Then drain the oil and put the corriander in a spice girnder. Do not use already ground corriander!!![p]Take this corriander and spreand it all over the tuna and then sear the tuna RARE! thats some good eating.

    I prepare mine with a light coat of teriyaki marinade and sprinkle with allspice and ground ginger. While i prep the tuna i have a cast iron griddle on the egg at 650-700*. Cook for 60-90 secs per side. slice thin and enjoy with soy, wasabi and pickled ginger.
