Pizza Night on BGE Forum

I guess last night was pizza night on the BGE forum, so I'll chime in. Normally pizza is a "day off" thing, because I like to make my own crust. But last night I decided to spin the wheel and buy a pre-fab pizza at Albertson's. I got the Mama Rosa, 2 for $4.99, large, Deluxe variety. I also added a couple handfuls of mozzerela (prefabs just don't have enough cheese) and some more pepperoni (I'm not fat enough...). The directions said 400F for 11-14 minutes if thawed so of course I stabilized the egg at 550F like always. Here's where some folks may go astray... I never, ever let the egg get above 550F, so my stone was never too hot sitting up there on the plate setter. And I did let it sit there for half an hour at 550F before putting the pizza on. I put lots of grits on the peel (no coarse corn meal) and slid the pizza onto the stone. At 8 minutes the cheese was starting to get bubbly and the crust was about perfect. One more minute and it was pizza-time. There must have been some hickory in the woodpile, left over from Sunday's pulled pork, because there was a bit more of a smokey taste than I normally get in pizza. It was still delicious though! Mrs. BBQBluesStringer and I give Mama Rosa two thumbs up when done on the egg!
