Gebhardt Chili Powder & Other Chili Powders

Snow's on it's way and all the chili powder talk below has me wanting to make some more chili.

Looking for some thoughts about Gebhardt chili powder or any other good chili powders to try.

I did get a hold of some San Antonio Chili Powder from the Chubster which is fantastic in making cheese enchilada's.

    Geb's is a blend...and to those who like it...there's none better!

    I take or send bottles to Egret each time I see him...he's a fan of the stuff!!

    He can give you a better lowdown than me as far as taste/use.

    You may want to buy your own ground chilis..and blend your own...or not!

    I tend to go this way..or use induvidual ground chili..ie, Anchos..Anaheims... Chili De Arbols...and a bunch of others I can't spell!

    As AB said on his show: “If you’re going to use this store bought, you might as well use the label from the jar too. Same Flavor.” Not sure about that, but….I do prefer Penzeys and a San Antonio blend. AB does have his own recipe for chili powder if you’re so inclined. I made it couple of years ago. If I remember correctly use a little less chili powder than the recipe calls for until you see how strong it is.

  • Gebhardt chili powder is the holy grail of chili/chile powder in TEXAS--never knew there was any other kind until I left TEXAS :lol:

    Penzey's web and catalogue give good descriptions of each kind-- ;)

    However, when it comes to making that stew, chili/chile peppers/powder gets about as personal as with/without tomatoes and beans :blink: and I certainly don't want to open that can of worms :whistle:

    being a chilihead let me add my.02 to the mix. you can get the most authentic chili powders in several different gauged grinds from Pepperjoe.com, Buenofoods.com and my most favorite place to shop when i lived there is The Fruit Basket in Albuquerque NM for authentic New Mexico red and green hatch chili products

    Hatch chili co is also a great place to get the "real stuff"
    NM is "the" chili capitol of the world so there is no place you can get finer product.

    I have absolutely no idea even where to start with blending my own.

    Previously I have used McCormick Dark and Light Chili Powder. The dark seems bitter so I have always used the light.

    It really is a lot easier then you think to make your own mixtures. Chili blends mainly consist of ground red chili, garlic,Mexican oregano, cumin and onion with a little garlic and salt thrown in.
    just get an assortment of the heat levels and eggsperiment, you can get mild, medium, hot, extra hot in both greeen and red and you can get grinds from flakes to very fine powders. just get some of each and blend away........
    that is the fun part of it.
    i find the best way to sample rubs or spices is to mix them in sour cream and try them as that is basically a blank pallet.

    I love the Hatch green chili's we get canned from the store here.

    Thank you for the sour cream idea, I was wondering how to taste the different chili powders. So far I have mostly used off the shelf grocery store brands of chili powder.

    I was at a specialty shop and some guy had a case of 25# of Gebhardt Chili Powder. I thought someone must like it.

    Love the pictures you posted below - looks like a place I would like to visit at some point in time.

    the pics i posted are from the Hatch chili festival of 06.
    The food channel had done a few shows on it and it is definetely a blast to experience. Hatch has 7 motel rooms but during the fest they host 25 to 30k on the weekend! it is the weekend after labor day each year. check out the roof on these shots. don't be afraid to eggseriment as the NM chilis are definetely the finest available.

    That is one heck of a lot of chili's.

    My wife and I used to sell 'stuff' at 1 to 4 day shows. All different types of shows but the environment is somewhat the same.

    The shows were great and a lot of fun.
