Roast & Pinto Beans

Was wanting something tender to stuff in tortillas for dinner. 3 lb. chuck roast with a can of rotel and beef broth at 2 1 /2 hours. Flipped…
The 4 hour mark and added 2 cans of rinsed pinto beans. Wanted to use dry beans from the start but couldn’t figure a way without totally submerging the roast.
Ready to pull, just shy of 5 hours.
Couple of servings missing...
Yeah beans, good thing this wasn’t chili. Overall a can of Rotel, one can each of beef and chicken broth to replace liquids during the cook, bits of the roast and some of the tastiest beans for being so simple.

I've never thought to cook a chuck roast with Rotelle! Pot roast is on the menu this week, may have to give that a shot.

I guess if you can be brave, I can too. I want to try what you did but using a bottle of Pace Picante Sauce. Think that would work the same way?

Sure, I think it would work. The flavor would be slightly different than the Rotel. Following America’s Test Kitchen; they say anytime a recipe calls for beef broth, they use half beef broth and half chicken broth with better flavor results. Which I have started doing.
I used a salt, pepper and garlic rub and browned the chuck on both sides. I can of Rotel, then broth to cover about ¾ of the roast and added more broth from time to time. In the end the flavor and the heat of the Rotel mellowed and wasn’t overly spicy. Of course it had to deal with a 3lb chuck and two cans of rinsed and drained pinto beans. The beans were in 40 minutes, +/- and really had a nice flavor.LBGE Katy (Houston) TX -
