The first cook was a complete success! I am happy and full from our first chicken dinner. Rubbed the thighs and legs with Dizzy Dust, cooked at 375 for about 40 minutes with the plate setter in place, then removed the plate setter for direct work (won't do that again). Used Cowboy lump with some apple wood chips for additional flavor.

Can't wait until I lay that huge salmon on my cedar planks tomorrow!
