Cornish game hens on old style egg ?
Woogeroo
Posts: 43
Hello,
I have been asked to attempt to cook 4 cornish game hens on the old style large green egg. Each one is less than 2 lbs each.
I have never cooked these type birds in any fashion... so any and all advice is appreciated.
I am pondering if I use the rack on top of the grill, or if I just place them on the grill itself.
I am curiosu about the brine as well, I imagien it woudl work as it is a bird, but since they are smaller I am thinking less salt to a gallon of water. I usually go 1 cup of salt to a glalon of water for a 5-8lb chicken. [p]Tips, advice, wishes of luck... [p]thanks,[p]-W [p]

woogeroo,[p]i do wish you luck - i have smoked five cornish hens at once using the vertical roasters - more than once i have used the "fruited pheasant" recipe found on page 192 of "smoke and spice" - the dressing found on that same page is "toadly" delicious - you can make the dressing the day before serving - seem to increase flavors - you will not be disappointed - [p]mr toad

For the brine I useda gallon of water with 1 cup of salt(gourmet-kosher)[p]one tablespoon each of:[p] black pepper
chilli powder
lemon peel[p]there were 4 of them, and it tooks about 1 hour and 45 mins to 2 hours
for all 4 of them to get done. [p]I started them out on the rack, but after an hour I decided to jsut put them on the grill itself, they turned out very nice.[p]they were very yummy.[p]Thanks for the tips.[p]-W
