how to cook cod or any whitefish?

Hey all
I have a question now that we are in the
Lenten season. How is a good way to cook
whitefish like Cod or Tilapia on the Large BGE? Is the plank the best way?
From what I see, use a soaked plank, cook
indirect, about 450 or so, Is that right?
Any suggestions would help.
Thanks BullyC

Here is a tilapia method.
Tilapia, Mainegg
Procedure:
1 This is one of the dishes I did this weekend for our group of "hookers" that was here for 4 days. The work shops include breakfast and dinner and I like do do things that look good, tastes great and keep the $$ down. this is a favorite in the summer. We use the frozen talipia from Sam's so it is a very cheep meal.
2 in the middle of a piece of parchment paper I put 6-8 pieces of blanched fresh green beans, 5-6 slices of summer squash, sprinkle a small handful of shredded carrots over this. Place one piece of fish on top of the pile then add a few long pieces of chives, a sprig of dill, a slice of lemon or lime top with a tsp of butter and set a cherry tomato on top of it all. fold and close up tight twisting the parchment to close or even staple the two ends if you have to.
3 It is very colorful and fragrant and tasty!
4 I did indirect at about 400. they do not take long,10 minutes maybe, that is why I blanch the green beans. I had to use dried dill on these as I forgot to raid my herb bed at home but they were great. all we bought for these were the fish and parchment When I am serving them I snip the top and I can see if the fish is done enough. if not it just takes a second more to get flakey. cheap, cheap, cheap!!
5 I thought I had pics on this pc but they must be on my laptop at home. I will add them tonight when I get there julie

if you are using a plank it is your "platesetter" set the board direct so it will smoke a little and impart that smoke on you fish...
the best talipia recipe i have had lately i did inside but you can use a cast iron skillett on your egg and do it outside.. i would set the pan direct at grid level and do all the veggies in the pan and the talipia on the grate outside the perimeter of the skillett.. or you can do this in a veggie basket.. but here it is enjoy
Talipia, and Veggies, Weight Watchers
3 filets talipia or another type of white fish
1 onion diced
1 zucchini sliced
1 squash sliced
1 pkg mushrooms sliced
1 clove garlic smashed and cut up
1 pkg cherry tomatoes sliced in half
olive oil
dizzy pig shaking the tree
1 place filets on a plate and liberally put the rub on
2 in a pan add olive oil and onion, wait till they soften up some add squash, and zucchini, add mushrooms and garlic let them all get almost dome and add the tomatoes
3 remove veggies from pan and add the talipia and cook until mostly done flipping once
4 add veggies back to pan and let them rest until the fish is flaky
5 serve and enjoy

i got most of this idea from one of the weightwatchers recepie cards the wife brought home i added the garlic and squash.. i am not sure how much of the original recepie is still left because i made it from memory and i don't have much of that
the key in this recipe for me was to make sure I did not overcook the tomatoes
happy eggin

We Blackened some Tilapia tonight for Ash Wed. I got the egg up to 500 with a cast iron pan on a raised grid. As the fillets were kind of thick I went 4-5 per side until they were easy to flake with a fork. They were delicious!! The blacking recipe I used is below. Sorry no pics as my daughter had my camera tonight.
Ingredients
• 3 tablespoons paprika powder
• 1 tablespoon salt
• 1 tablespoon onion powder
• 1 teaspoon ground white pepper
• 1 teaspoon ground black pepper
• 1 teaspoon cayenne pepper
• 1 teaspoon dried thyme
• 1 teaspoon dried oregano
• ½ teaspoon celery seed
• 1 pinch garlic powder
• 1 tablespoon vegetable oil
• 1 pound Tilapia fillets
• 1 lemon
Directions
1. Combine first 10 ingredients in a large re-sealable baggie and mix well.
2. Add Tilapia fillets one at a time to the bag and coat well - remove and let them sit for 30 minutes at room temperature.
3. Slice the lemon into wedges.
4. Heat up a frying pan over med high heat.
5. Pour oil into the frying pan when the oil is so hot it's almost smoking add Tilapia fillets.
6. Fry the Tilapia fillets until the fillets look opaque and can be easily flaked with a fork - about 3 minutes per side.
7. Remove fillets to plates, add a lemon wedge and serve immediately.Everyday is Saturday and tomorrow is always Sunday. -
I did Haddock once where it was extremely easy and extremely delicious but more cleanup than usual.
I cooked the skin-on filet (1.3/4lb) the same as Salmon:
Direct, skin side down, 400. some butter and lemon slices on top. cooked for about 10-15 minutes, no flipping.
The haddock came off the grill easily with a spatula and tongs but the skin was soldered to the grid. The fish was delicious!
I cranked up the heat and let it burn and that took care of most of the skin and the grill brush did the rest. -
jl has somegreat tilapia recipes from max's girlfriend. jl has a full plate right now but i will let him know of your question.

I do tilapia all the time. The only mistake you can make is to put a skinless fillet directly on the grill. It will stick and/or fall through every time. But a plank works great, parchment paper works great, a skillet works great…the possible recipes are endless. Use one of the recipes already posted or grab another and start egging! Just don’t put it directly on the grill.

Talipia and salmon is a stand by around hear. I noemally don't do talopia on plank. A simple way is on a raised grill at 300 with salt, cracked pepper and a slice of limon on each fellet.
