I know there has been alot of discussions about brinning turkeys and chicken but I've never copied a receipe. Would someone please post a receipe for a brine and the lenght of time needed to tenderize a smal turkey. Thanks.

    BajaTom, a very simple brine I have used with great repeated success is merely 1 cup of kosher salt, 1 cup of brown sugar and 1 gallon of water. Put to a boil in order to sterlize and then allow to cool. It's important that your bird stays cold while submersed in this solution for 12 to 24 hours. One trick that works for me with a BIG bird is placing it inside a new plastic sack filled with the brine and then placing that in a larger cooler with sufficient ice to keep it cool.

  • Just did some yard bird on Saturday, I used 1/2 cup of Kosher salt to about a gallon of water, put in my chicken thighs, let sit about 4 hours, rinsed afterwards, let dry in the refrigerator on a baking rack with paper towel on bottom for a couple of hours, applied rub before putting in the refer. This was some of best chicken I have had.
