If they are that thin cut the bone away and stuff them with cheese and wrap in bacon..

I'm always happy with a mushroom and herb stuffing, maybe a little sausage. Roll them up just like Celtic Wolf said and wrap them in bacon.

personally, i would fry them and egg some potatoes to go with them. if you go with the wrap, lots of combos work. along with the chutney ones iv done canned chilis and cheese that were good too. you want a wet filling as its really easy to overcook the pork on these things and the pork will get dryfukahwee maineyou can lead a fish to water but you can not make him drink it -
as fishlessman says, Fry them...
then cook your sides on the egg. -

How do u cook them and at what temp to keep them from being tough and drying out. Do you do them indirect/direct?, raised grid? I too have a package of these to use up. They always seem get dry and tough. -
The bacon will prevent them from being "dried out", but I would cook them quickly. 325 dome indirect till 140.
If it were me I'd be adding all kinds of stuff to the stuff. Rehydrated (EVOO) Sun dried Tomatoes, Sliced Baby Bellas and Shredded Asiago Cheese is my favorite.
Cheddar and Brocolli, or Cheddar and Aspasagus are good. Mushroom and Colby (or Jack). Ham and Swiss. Cornbread Stuffing and diced apples (optional Apple Brandy or Calados)..
Wrap them up tight with the bacon. Sprinkle with your favorite rub. yudda yudda -

Egg, bread crumbs, a little oil, cast iron skillet, turn those suckers right into pork schnitzels....parsley, lemon juice...Yum!
