Does anyone have good definitions or examples of famous regional styles of barbecue? What makes Kansas City barbecue Kansas City barbecue? What is a Memphis style barbecue? And a Texas style barbecue? I'm interested in all aspects of regional barbecue. What are the meats of choice? What spices and rubs are applied? What is the cooking technique? And what goes into their regional barbecue sauces?[p]This could turn into a research project and a book, I suppose. How I would hate to have to visit all these well known barbecue cities and sample their fare... Aside from the above can you suggest some more locales that are known for their superb characteristic barbecue?[p]Thanks![p]BBS
