Storing pulled pork

I did 75 pounds of pork picnic roasts this weekend. Already pulled and put away in foil pans in the refrigerator.
I need to serve it next Saturday. Should I freeze it in ziplock bags or will it be OK in the refrigerator??

I would freeze it, vacuum sealed if possible. If not ziplocks will be fine for such a short time. I would recommend putting it in the refrigerator 2 days prior to serving to thaw. IMO a week is a bit too long to just leave it refrigerated. It probably wouldn't hurt anybody but you don't want to be responsible if it did!

I agree with GulfCoastBBQ -- you would be taking a huge risk by not freezing the pork.
