Easy Breakfast Pizza

This was the recipe Diane Grogan presented at the Lotta Bull demonstration last week. I will put my modifications in parenthesis.
Easy Breakfast Pizza
Ingredients
1 lb pork sausage
1 cup Hash Browns (thawed) or fresh shredded potatoes
1 cup shredded cheese
3 large eggs
1/2 tsp salt
dash of pepper
3 tsp grated parmesan cheese (optional)
1 pkg crescent rolls
(I added sauteed onions & 1/4 cup salsa)
Cook sausage until brown & crumbly. Drain well.
Seperate crescent roll dough into 8 triangles and place in ungreased 12" pizza pan. (I used a CI skillet & sprayed it wih Pam)
Press dough over bottom and slightly up the sides of the pan to form crust.
Spoon sausage & sauteed onion over the crust. Sprinkle on the hash browns or shredded potatoes. Sprinkle grated cheese over the top of the potatoes. (I used mozzarella & italian blend)
Spoon salsa over the cheese. Beat the eggs slightly and add salt & pepper. Drizzle the eggs over the cheese mixture.
Bake indirect on a raised grid at 350 for 25-30 minutes. (mine took almost an hour because I used a smaller pan and did not cut down on the ingredients)
Be careful not to overbake.
Remove & sprinkle with grated parmesan cheese (if you are using it). Slice & serve...this is delicious

FaithHappily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
