I was thinking of doing some chickens and thought I'd seek some advice. Any good side ideas to go with? Happy Saturday!

Edit: I should have read your post more carefully. Click on Cookbook on the top toolbar, then recipes, then sides. There are dozens of great side dishes to go along with your chicken.

    Egg away! ;) Mark

I used to think beer can chicken was the bomb until the fine folks here converted me to a spatchcocker! Low, medium, or high heat, all work well. Crank it up for a crisp skin. Personally, I like to rub with olive oil, kosher salt, fresh ground pepper, and a little bit of garlic powder. Any of the Dizzy rubs work great, and I got some Penzy's rubs for Christmas that I have been enjoying, also. I used an Alton Brown method not long ago that was great: Cook 4 pieces of bacon in a cast iron skillet, remove and drain all but 1T of fat. Place chicken in skillet, and add a couple dozen pearl onions. Cook at 500 degrees until thigh is at 170, serve the onions as a side with the bacon. He used cornish hens, but I used about a 4 lb. bird. I'll try for pics next time. It was great!

  • Google spatchcock chicken and try that. Better even cooking then beer can.
