Stuffed Pork Roast

We made this tonight for dinner. It was not too bad. Just a regular old pork loin butterflied and stuffed with spinach, feta, and a little garlic.

That looks real good! How was that melted feta?

The feta was fine. Not the prettiest cheese when melted, but tasty. I got some that had basil and tomato in it.
Pork loins are recession-proof. What a good value. This roast was bigger than what we needed, so leftovers for sandwiches. I cut the rest into chops and have a big chunk for making some stew in the crock pot. Tonight is pizza, though. -
Make a wine gravy by mixing some white wine and broth, heat to low heat, then add some cream or milk,and wisk together,add some corn starch and wisk over medium heat until thick. Put the left over cutlets on toast and douse with gravy. Mmmmmm...comfort food!

That looks great! I love Feta, and it goes so well with pork. We bought a big loin yesterday, for an upcoming family event, can't wait to do our first one on the Egg..

You did a good job.That little bit of pink is what you want when the cook is done.In my book there is nothing worse than over cooked pork.As for tonight being a pizza night it seems like the second most desired food on the forum lately has been the pie.I am one of them also.
