Coffee Can Method

The coffee can is bottomless entirely. Depending on the temp (I assume you want to use a very low temp), it should burn for at least 4 hours.

Alton Brown had a show on smoking. If you truly want to cold smoke make a smoke generator outside of the egg and vent into the lower vent. Something as simple as a cardboard box and an electric element or even use lump. Needless to say watch the fire so the cardboard box doesn't catch fire. Some kind of plastic box or terracotta pot would also work.
Smoking cheese a lot of folk will take 4 or 6 charcoal briquettes make sure they are lit and put some flavor wood on top of the charcoal. They then get a pan of ice cubes under the cheese on the plate setter, then the cheese on the grate.
