Any special details for using coffee. Im assuming any fresh coffee bean and ground fine. any sugestions?

    Pretty much...but if you have the option, dont grind it super fine.

    Try to approximate the granual size of the pepper for instance.

    Bobby Flay has an Ancho Chili-Espresso rub I have been tweaking for some years!!

    It's a good place to start!

    Treat the ground coffee beans like you might a cracked peppercorn in a rub. See how much you like.

    I also keep the morning grounds and dry them out and when doing a steak or high sear throw 3-4 tablespoons on for a quick smoke high. The grounds also work great in an aluminum pouch w/holes for poultry.

    use it all the time. i do not grind fine....
    also if rushed on time i keep instant expresso granduals in the freezer and use it.

    At Leroy’s Coop Party I was given a rub by (lady in Fort Worth, ) we use on everything:
    Equal parts…
    Kosher Salt
    Coffee Beans or instant
    Black pepper balls
    Sugar tupelo (?) (Not sure if that is correct name)
    I put it in a coffee grinder and WOW….

    My wife's favorite steak rub (Cowboy Steak recipe from Rob Walsh). Can't t-rex, though, the garlic and thyme will burn.

    ● 1 tbsp. coarse kosher salt
    ● 1 tsp. Hungarian sweet paprika
    ● 1 tsp. garlic powder
    ● 1 tsp. coarsely ground black pepper
    ● 1 tsp. dried ground thyme
    ● 1 tsp. finely ground coffee beans

    I use red eye every time I make Boston butt. I wanted to try to duplicate a steak I had at Capitol Grill (kono encrusted). I think it had more coffee in it. I tried it tonight. It was good. Next time I want to add more coffee and less salt.
