Thanks again for the flank steak recipe, Max. I made a few for some friends last night and they were gone in about 5 minutes! I tied them instead of using toothpicks and I cooked direct at 350-400° for about 35-40 mins turning every 10 minutes. Came out perfect! Everyone agreed that this is a "must make" dish on a regular basis. I had sticker shock on those red and yellow peppers, though. I paid about 8 bucks for the steak and the peppers cost 9 bucks! Go figure![p]Best Regards,

    I'll add one other note. I got my flank steaks at the butcher since I was picking up some other stuff anyway. The steaks he had pre-cut were pretty thin, but I had him try and butterfly them anyway. He didn't do a very good job. The next time I do these (next week, LOL!), I'm going to get him to just cut the original steaks a little thinner than his display models and then pound them out some more if I need to.[p]Jim

    first, glad they came out great for you too. . .next time i do them, i'm going to try them direct as well. . .[p]welcome to the world of large peppers. ..should have warned you about the sticker shock. .. large yellows and oranges in particular run about 4 - 5 dollars a pound. .. .coscto sell 6 packs of color variety for around $7. . .also, the prociutto can be a killer as well. . .the steak is the cheapest part of the recipe. .. [p]w/ regard to the butterflying. . .2 things . . .while i'm the one that did say the butcher would gladly do it for you, i failed to mention that they will also do it quickly and sometimes not so neatly. ...thats why i do my own. ..i go slow and careful. .. it also helps to start with the largest flank steaks you can find. . .i look through the whole rack at the meat counter and try to pull the biggest ones there. . .i try to go for at least 2#ers. .. [p]once again though, it makes me feel real good that you and and chuck (see his entry above) both had such good success with it as well. .. [p]best[p]max
