You have to admire a man of few words.:laugh:
You need to get from below 40 degrees to above 140 in less than 4 hours. So leave it in the fridge until it's go time. -
Any particular reason you take it out an hour before?
It is not necessary or really recommended -

The external temp of the meat has to get to 140 in 4 hours. As long as you aren't poking it consistently or it's not ground meat you'll make it.
