chicken drumsticks

I'm going to cook some chicken drumsticks. I noticed some recipes on the board call for lightly dusting the chicken with either flour or cornstarch. I understand if you're frying it, but what does dusting the chicken before smoking it do?

Very crisp - like fried chicken without the greasiness.

I use a 3:1 mixture of flour:corn starch.

mine didn't look as good as yours. I just coated it with 3-1 flour, cornstarch, a bit of DP raging river, and some salt. Smoked them indirect on one of those funny chicken drumstick holders, at about 300 for about 1.5 hrs. boy were they tender and jucy.
