rock,
just don't let the dog or the neighbor's kids near them. . . .i left mine out in the open. ..figured if i covered them, they might get mushy, or worse, continue to cook in their own heat a little. . .can't remember exactly what trex says on the subject. . .[p]

mad max beyond eggdome,
Thanks for the comments. That's what I thought too.

rock,
I don't cover them as they are supposedly relaxing according to TRex's theory. My only trick using my small to nuke them that in order to get the temp down to 400 in 20 minutes I snuff the egg during that time and then up on return open it wide open for the brief time it takes to finish them off. Works for me anyway!

kat,
thanks for the help. I'll give that a try.

rock,[p]I rest on a plate, uncovered, for 20 minutes, and lightly reseason with kosher salt and pepper just before putting the steak back on the Egg for the 400 F finishing cook.[p]TRex
