Shrimp, Scallops and Tilapia

I started out by roasting some poblanos that Susan is going to use later in the week. I have roasted lots of red peppers before, but these poblanos smell absolutely wonderful when you are pealing the skin off. I also roasted one red pepper that I used in a new rice, side dish that turned out great.

Here are the peppers are they were going on.

For dinner, I grilled some tilapia, shrimp and sea scallops and added brown rice with the roasted red pepper and some sauteed Asian Eggplant, zucs and onions.

The rice was topped with some fresh grated Parmesan and it was really really good!
