Terry, I made this dough with very little yeast last Tuesday for a slow rise in the fridge until Friday. The flavor is wonderful. -RP

its hit or miss, consistency is always an issue, someone the other day was speaking about weighing the flour instead of measuring it which would probably cure my issues, but it makes way too much sense & because I am a stubborn sob, I'll likely just keep doing it the same old wayhappy in the hut

Beer in the batter sounds like a tasty idea. But what a moral dilemma! If you use really good beer it is a sacrifice and a sin. If you use bad beer you are pouring swill into your food. I think I’ll have another beer and think about it.

My current pizza mentor doesn't measure the flour at all. She puts the liquids, salt, sugar, and yeast in the KA mixing bowl and using the mixing paddle she adds flour until she gets the consistency she wants. Says that measuring doesn't take into account humidity which can make a big difference. -RP

Great job Randy! Guess you fell off the wagon for a short spell on those. Don't worry. What life if you can't enjoy it from time to time?!! Haven't heard but guess the girls made it back from there big overseas adventure. I bet the Filly aged 5 years in a month!! I know I would!

They got back alive, then a week later the youngest hopped in her car and drove to Louisiana for a week and a half. Ah to be young again. I did the diet and exercise thing religiously for three months and my numbers remained exactly the same, so why torture myself? -RP
