Hot and fast...don't overcook, or it will dry out. Seems like we normally do it about 550 for 4 min per side. We like it med. rare.

I have found that about a minute and 35 seconds a side is good for 1" thick steaks. They really go fast so watch them closely.

Hendu,[p]I differ than the other 2 guys offering times for tuna. I like mine more done rather than still swimming around the sushi table. I do the 1" or more steaks with as hot of a fire as I can get and for about a total of 8-10 min or until the internal temp hits 110-114°. The last time I did them I used my new Lodge skillet and coated mine with Dizzy Dust Firewalk. Spray on some Pam or coat with olive oil to help prevent sticking and using a fish grid allows the use of a spatula to flip them easier.[p]Tim
