What Egg temp for cooking whole chicken
Birdman
Posts: 66
I have seen some chicken recipes where the chicken is cooked at a very high temp (450-500 degrees), and others with a lower temp (325 degrees). What are the advantages/disadvantages of each? Is either method preferable?[p]TIA,[p]Birdman

Birdman,
I've not tried cooking at the higher temps, but when I cook spatchcocked chicken, I do them at 350-375.[p]TNW

I always do them at around 350. I rub the skin with olive oil before I apply a rub and that gives me the crispy skin I'm always looking for.

ColaCooker, how long do you cook your bird @ 350? That one looks good. Is that indirect, or just a drip pan? Thx.

ColaCooker,[p]You mean you're 'sposed to eat the meat too? I thought it was just there to hold the skin while it cooks.[p]BBS

Here is a link to my webpage on cooking spatchcocked chickens. I do mine direct, 1 hour, 350 degrees on a raised grid. [p]TNW

Rick the Newbie,
It normally takes about 1 hour. I used to put a polder in and keep an eye on the breast temp. but it was always just about an hour so now I don't bother with the polder. I do mine indirect over a plate setter.
