Thanks to some of you folks here i have been marinating my pork butts in a terrific marinade overnight and about to start up the large egg. I have two hunks o'pig to cook, totalling about 14lbs. One is slightly larger than the other. [p]In the past I have cooked one small piece (6lbs) very slowly, maybe 12 hours at about 250-275. Would this apply here as well? Also, I only have one thermometer. Should I put it into the smaller one and when it hits the correct temp (?) take that off, insert the probe into the larger one until it's done?[p]Also, local BGE store didn't have much exotic (i.e. Guava) wood chunks, so I opted for apple.[p](Hehehe, sound like I'm typing funny stuff here...)

greeneggonmyface,[p]Cook 2 butts the same way you would cook one. I place my thermo in the smaller one and when that one is done, move it to the larger as you suggested. Sounds like a great Friday night![p]Jim

greeneggonmyface,[p]Hey! I axed these questions of you way down in an old thread that got archived...... so, if you don't mind, I'm re-axing with a cut and paste. :~)[p]
"The Thai coconut milk marinade for the chicken sounds great.... do you mix all of the ingredients cold or is it simmered first..... and how much does the coconut milk flavor carry over into the finished chicken? High or low heat approach to the grilling?[p]Curious, too, about the ceviche. Is the smoked salmon of the cold smoked (the kind you put on bagels) variety or the cooked, flakey kind..... and would you mind posting proportions of the ingredients?" .... of the Thai coconut, too please.[p]Thanks and Friday Beers,
    John[p]
