Duck Breast Recipe Needed

Hi Gang,
I've got a buddy who just got back from a duck hunt(novice hunter and cook) and was asking for a recipe to cook the breasts. I've never cooked any. I know that JLockheart is "Lord of the Ducks", but I'm thinking he may still be working those crazy hours and may not get a chance to post. Does anyone have any tried and true recipes for duck? I sure would appreciate the assist! TIA.

I have tried JLs recipe from Richard's post and it is very good. If your buddy has already skinned the breasts (not uncommon) then it makes a big differnce IMO. Skinned breasts need to be cooked to an internal of no more than 150-155, and honestly I prefer them to pull them at about 140 and rest in foil. If I cook the whole breast, I will "bleed out" in water in the fridge for at least 25 hours, and then milk for 12-24 hours. marinate in cheap, italian dressing for another 12 hours and cook to temp.
The quick and dirty process is what we call Duck Nuggets. 2 inch x 2 inch strip of duck breast, wrapped in bacon with a slice of jalepeno, slice of onion smeared with cream cheese and a toothpick run throught the whole mess. Of course a nice sprinkle of your favorite rub adds a little depth. Cook RAISED direct at about 325 until the bacon crisps - greatness! -

I would highly recommend brining for a night then soaking in a milk or buttermilk bath for a day. Then season / marinate as you would a steak. Cook direct at 400 until medium rare +.
