First Dessert - Pineapple upside down cake

Broke down and bought a Dutch Oven oven the weekend, since it has been so chilly around here recently.
Since I don't really cook in Dutch Ovens regularly, I decided with something basic to start with - Pineapple upside down cake.
I cheated, and used pre-mixed yellow cake... ALL ingredients used pictured below:

First things first, melt 1/2 cup of butter, one whole stick:

Once the butter is melted, add in your 1 cup of brown sugar:

Suger is now sprinkled around, time for your pineapple rings and cherries, whatever fits properly in your size Dutchie: (if it is cold out, and the picture taker is in a hurry, your pineapples will look fuzzy like this)

Prep your cake mix, the box of yellow cake, 3 eggs, pineapple juice and water, beat well, and pour over you pineapples:

Wait.
Wait.
@ 325 we let it cook for about 40 min'ish, until it looked like this:

I took a spatula and worked around the edges before flipping over, even though I don't think it was really necessary. Just flip and wiggle:

Whine a little bit about not having your coals evenly distributed, and then eat... tada:

Nice Job!

That turned out great! Unbelievable for your first dessert. BTW-Pre mixed cake mix isn't cheating.
-
It isn't????
My mom is old school. If I'm not mixing sugar, flour, and some vanilla... I feel like I am cheating. -
Did you use the dutch oven cover during cooking?
-
DawnC,
Looks good from here. Can't see but did you try it indirect? It will help, my first few things I baked were pretty dark by not going indirect. I've made these mini pineapple upside down cakes in my Lodge:

These were made w/ canned biscuits. -
That looks fantastic. My favorite cake BTW. Wife doesn't like em so I don't get it often.
You do realize you bought an open can of pineapples. :woohoo:
Looks great. Thanks -
Ah yes... Had it covered up durig the cook. Didn't take a picture because it looked a little boring.
-
Didn't even think of trying it indirect. Next time I'll try that to even out the cooking temp.
Thanks!!

LOL... the butter was pre-opened too.
I was getting everything ready and then decided to take some pics. Don't worry, I didn't poison anyone. -
Great job Dawn! It looks wonderful, and for your first time too. I like the way that it has a "healthy tan" on one side. I wonder if you rotated the DO a couple times during the cook, if that would help.
