Brisket in a Towel

They will be here any minute...but I gotta tell you. I tasted the brisket this morning when it first came off and thought it was a little dry. Wrapped it in foil and then in a beach towel and stuck it in the warming drawer (not on). Tasted it again middle of this afternoon and I can't BELIEVE the difference. Soft, juicy, tender...incredibly good. Obviously that spa treatment works wonders on the brisket! Amazing!!!!![p]Wish me luck! Happy Passover everyone![p]mShark

    Mollyshark,
    you will find that any meat subjected to a high temp that this occurs. moisture receeds from the high temp. so just like pulled pork after taking it off the grill it should be allowed to "rest". If pulled imeadeately it will be dry, wait 1 hour and it will be wet.
