simple trout recipe

I'm thawing out some speckled trout fillets in the sink. I have some lemmons and a few spices. Does anyone have a simple recipe?

    I generally do my specs by coating with Italian dressing, a very, very lite dusting blackening seasoning and indirect at about 375, till they are flaky. If you don’t have blackening seasoning, salt, pepper and a little garlic powder will do just fine. I use a disposable mesh grate so they don’t fall through the reg. grate. You can just serve them on the disposable grate if you want. I will either spray the grate with Pam or place the fillets on lemon slices to minimize sticking. Specs really absorb the smoke so make sure you have a clean fire.

    I like trout almomdine. grill your trout till almost done. Put it in a CI and add a lemon butter sauce with toasted almonds at the end. serve it warm with a nice white wine. Good luck, Tom

    I like lemmon,dill and then slather with mayo and cook with apple wood...You want taste the mayo but it will keep fish moist and the fish want stick.

    I like to fillet them leaving the skin on, remove the pin bones, season with salt pepper and maybe garlic or dill, top with lemon and grill until done. (about 130 degrees internal temp)

    If you are cooking at the regular grill height, build a smaller fire. If you have a grill extender it's easier to control the cook.

    The fillets in the picture with the white sauce have been coated with tarter sauce before cooking.
