Chipotle & Butter injected Turkey Breast

Howdy folks...
I finally found some time for some cooking today besides the regular brats and burgers. My day job is still killing me at the moment with 80 hours and 4-5 nights out of town, hope spring come soon to have more time to que.
Heres a 11 pound bone in organic turkey breast. I injected it with melted butter that i mixed with fine ground chipotle, then rubbed it with a poultry seasoning thats made by a friend of mine
Preheated the Egg to 350 with some cherry and hazelnut wood and threw on the boobs. The egg held the temperature rock steady even though it rained cats and dogs and winds were strong.
After 3,5 hours the meat reached 160 F, so i took it off and let it rest for 20 Minutes. Mmmmmmhhhhh ! Good eats ! Flavourwise this recipe come right after the apple brined turkey and the meat was very tender.
Cant wait to use the leftovers for sandwiches and use the smokey carcass for stock.

I'm curious...did you just filet the breast off the bone after cooking in oder to slice it the way you did it? If it taste as good as it looks I'm sure everyone will be happy. -
