Bison/Buffalo/Monkey-Now I'm a believer

I purchased my egg about a month ago and tried ribs for the first time this weekend and the Monkey's had it right "I'm a Believer" for the egg is the only way to cook ribs now.[p]I work for a company that is opening up a chain of restaurants nationwide that features bison as it's feature item. I have been wanting to try some bison steaks/burgers out and have everyone from the office down to try it out on a egg. Since bison is so low in fat content I am concerned about drying the meat out. Has anyone grilled bison before? Any thoughts or suggestions that anyone has would be greatly appreciated.

Yes, I have tried grilling Bison burgers on the egg. The burgers were the preformed 1/4 pound patties. They cooked very nice and very similar to regular burger. I did not notice any real difference. In fact, in the same cook, I did burger patties too, No one could tell the difference.[p]Banker John
