pan style greek pizza crust?

whats the secret to getting the little cruncy bubbles on the crust exterior, is it spraying the crust with oil or adding extra oil to the dough before hand. im pretty happy with my deep dish crusts and the napoletana
brick oven style crusts, but that pan style greek crust is one ive never gotten right. we have a few greek owned places that make a really good pan pizza, not sure how they are in other areas.
