Adding grilled carrots and potatoes to pot roast?

Have a pot roast on the egg now and was thinking of grilling the taters and carrots till the carrots caramelize and then put in the dutch oven with one hour to go before the pot roast is done. I have put veggies in the roast before and though well done I like the browned up texture and flavor that you get when grilled. Do you think this approach will work?

How are you cooking the pot roast - simmering in liquid & what temperature?
If so, should work fine. Remember further cooking will even more softening of what every you put in. Onion's will most likely dissolve.

I normally roast my veggies to caramelize them a bit, then put them in with the roast the last hour or so. The veggies stay firmer and bring more flavor to the meal.

Doing the cook in a dutch oven at 300 dome for about four and one half hours with a beef and chicken stock mix 1/2 cup each. Plus one and a half cup of water.After cooking add 1/2 cup red wine and cook down.
