Stuffed Chicken Breasts

We have enjoyed this cook several times but this is the first time for pictures.
We started with 4 large boneless, skinless chicken breasts which were butterflied and pounded thin. Next a little Garden Vegetable cream cheese, red & green peppers, sliced mushrooms, chives and baby spinach.

Rolled, wrapped with bacon with a dusting of DP Tsunami Spin

LBGE set up indirect @300° with pecan chips added

Cooking time was ~45-50 minutes, Thermapen read 175°

One of these babies and a piece of garlic bread was all I needed.

looks good, I would have thought 175 was to much? I usually pull chicken breasts at 155 or so, is it differnt when stuffed?

It's kind of a tradeoff -- I cook @275-300° dome for a longer period of time in order to get the stuffing good and hot. The chicken is still plenty moist.
I suppose the bacon helps. -
The chow looks great! It looks like the lead chef is enjoying herself too! I'll have to get my lead chefs involved in something like that too!
