I Finally Decided to Pony up the Dough

It's been a while since my last post but I finally talked myself into buying a Thermapen today. The projected delivery is the 26th and I don't know if I can make it until then. Does anyone have any good bone-in chicken recipes that I can use for my first Thermapen cook?

Use a seasoning of your choice, raised grid, drip pan 400° to 500° for about an hour. Check at 45 minutes. You want 165° neat. The higher temp will get a darker crispier skin.
Both took 1 hour pulled chicken at 165° - both were very moist and tasted great.

Split it, sprinkle both sides with s&p cumin cayenne garlic and onion powder cover with italian let set all night skin side down 250-275 bout 40-50 flip cover with favortie bbq sauce and cook for 10-15
