Due to the excellent help from Mike in Abita and 2EggTim. Today's brisket lunch for eight was a great success! It was moist, tender and delicious, and received rave reviews from all in attendance.

I should have, but did not take any. The brisket, however was picture perfect.
At the end of the day, I decided not to use the ramp mode, just felt more comfortable without it.
