Leftover Pulled Pork Enchiladas

We got tired of pork sandwiches, so I decided to make enchiladas.
Used Old El Paso enchilada sauce, heated up the pork in the sauce, added 1 can Rotel tomatoes with green chilies, added chili powder to kick it up.
Rolled the meat up in flour tortillas added a little 4 cheese mexican blend, then rolled them up. Topped with more sauce and cheese.
Baked for 20 minutes on 350 degrees and topped with fresh cilantro.
That's todays lunch!

The heat was negligible. I could have REALLY kicked it up, but I was serving it to people that don't eat hot stuff. If it was just me, I would have used the Rotel "Hot" instead of mild, added fresh jalepenos, and some hot sauce, maybe some canned chipotle peppers in adobo sauce (my favorite secret weapon for heat!!!!)Then I would think all you eggheads that like spice would like it ALOT! Plus it was just lunch, and no beer was in sight!

I like the hot, but the family is a notch or two below me on the heat;)
The sunset? AWESOME! They don't bore me at all. I grew up on the east coast of Florida, so I was more used to sunrises. Either one is amazing, in my book.Knoxville, TN

you know I was thinking exactly the same thing to do with my leftover pork butt from this weekend, and those look absolutely deliciuos... I do the enchiladas a different way, or I guess in Mexico we all do for that matter... I'll post photos tomorrow!
