Beef shoulder fillet

I have a beef shoulder fillet that I was going to cook tonight. The package says to cook in oven at 325 for 35 to 40 minutes or until internal temp is 155.

Would it be better to cook it slower and longer?

Also, at what temp should I pull for Medium to Med/Rare outcome?
