Browning Wings

I'm new to this community. I started by experimenting with some chicken wings. About half of them browned up nicely, while the other half did not. I'm not sure if I had some hot spots on my grill, or if the size difference on some of the wings made the difference.[p]Any recommendations for achieving uniform brownness? Would spraying the wings with Pam or something like that help?

    I agree that you are dealing with a hot spot. Mine typically resides around 2 o'clock and the only way to get around it is rotating the chicken or turning the grate itself.[p]I'm a wing fan, too. Here is a great recipe I've have done many times with consistent success. Give it a try![p]John[p]

    ChefRD's wings rule.[p]Though I always end up with hotter parts of the grill than others, I have been able to even things out a bit more by getting a small pile of lump screaming red, spreading it out, and dumping new lump overtop then choking it down. I still end up with areas of the grill that are cooler than others, but those are nice for moving the pieces that are cooking faster. A little observation goes a long way when dealing with hotspots.[p]Man, I just flipped on this "final 4" game expecting an exciting finish, only to see Marquette getting blown out big. The Terps wudda put up a better fight, eh?[p]How dem reebs lookin?

    Nature Boy,[p]Good idea..... I'll try your method of spreading out the hot coals and pouring fresh on top. And yes, a little observation goes a long way.
    What I have done in the past is stir up the coals just after the fire has established..... seems to help with evening out the heat.[p]Just checked the ribs and they are nearly done...... just a little longer to go![p]Hey, I don't know about the Terps but I think Duke would have put up a better fight. :~)[p]John

    I guess stirring the coals with your established fire would pretty much do the same thing. Good thankin![p]Speaking of stirring the coals....Duke!???!!!! [p]I was SO happy to see them disappear from the tourney a day before my beloved turtles.

    when i was doing my mandarin wings (see forum posting), i also had a hotspot, but mine was between 12 and 1. . .do you suppose the change to daylight savings time had something to do with the one hour difference between yours and mine??[p]happy monday[p]max
