I was in NYC earlier this week, and went to Bobby Flay's Mesa Grill. I tried the chipotle glazed ribeye w/ green and red chili sauce. The green sauce was INCREDIBLE...more flavor than heat [but you can change that ]. I'm going to try on bone-in chicken breasts this weekend. I would imagine this is fantastic on most meats...
Here's the recipe
Green Chile Sauce:
2 poblano chiles, grilled, peeled, seeded, and chopped
1 medium white onion, grilled and chopped
1 to 2 cloves garlic, chopped
2 tablespoons chopped fresh epazote, or fresh oregano leaves
1/4 cup cold water
1 tablespoon honey
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Place all ingredients in a blender and blend until smooth. Season with salt and pepper, to taste.

I wish I could grow epazote in my herb garden, but my suppliers don't carry it. I make do with a couple kinds of oregano, but it's not the same. :(
Do you think the recipe would work well with dried epazote? -
Good question. I'm not sure where I'm going to find epazote....I've never seen it in the grocery store before! I will would definitely try dried epazote, and see how it is.
