Last Minute Recipe for Group

Unknown
edited November -1 in EggHead Forum
A larger group than is expected is showing up and I need a fish (whole salmon etc) recipe that is quick (no overnight rub), easy and delicious. It also has to be different than the dill and brown sugar recipe which meets criteria but I am over it. Any suggestions! [p]

Cyclescoot,[p]I like to marinate salmon in a mixture of lemon juice, lime juice, and lemon pepper, then throw on a hot grill with alder wood. Very simple, very good. Marinating time can be as little as half an hour.[p]TRex

    Cyclescoot,
Gretl`s bourbon diJoun is always a favorite at our house, and it requires no marinade time...link attached[p]Wess

Cyclescoot, Try maple syrup, salt & pepper on your salmon. Simple & elegant. Even better if you add a bit of Mrs. Dog's Jamaican Jerk Marinade. Use a bit of fruit wood.... JCA

Cyclescoot, knowing that Gretl's recipe is wonderful (and that apparently you have tried it more than once yourself), a quick solution is to use one of the bottled marinades that you can pick up at most grocery stores. I have tried both lemon pepper and mesquite with lime juice and it really is pretty good. Marinade for 30-60 minutes and then grill as usual. It works well.
