I have been challenged.........what to cook?

The bartebder at my favorite drinking establishment has challenged me. I quite often bring "leftovers" (I quote that because I make too much food on purpose) down to him and often get some free beer samples. I think I may be watching the final 4 there tomorrow night, after Q'ing for the afternoon. I have never really done much as far a seafood goes on the BGE (other than shrimp). Knowing I'l be egging tomorrow he challenged me to do something for him for his dinner tomorrow night.....yes, some seafood. Gat any suggestions? I figure if I do a vegi (beans probably) and potato to go with it. He likes spices so........what does the forum think? Any recipes you find particularly great? Any advice would be helpful!!     Toe 49, I hate seafood but I LOVE tuna on the egg. It's very easy, I really like the oriental tuna by QBabe (currently our favorite egg food). Anyway the only problem with tuna is its gotta be served right out of the fire. Maybe you can take you egg to the bar, cook out back, and he supply your cooking beverages. I wouldn't think seafood to be the best choice if you have to transport it after its cooked. Do a big ol monster prime rib or london broil.

    I did some salmon a little while back that rocked. I got the recipe from Randy's site:

    Actually, the place is less than a minute from my house....I'll be able to have it down there almost as quickly as it would be to bring it to our dining room table. Although, not that you mention it, I could throw the custom made table into the back of my truck and smoke the seafood right outside the front window of the bar!!

    You say you haven't done much seafood "other than shrimp". What's wrong with doing him some bacon-wrapped shrimp? Any way you look at it, it seems to be a good deal for both!

    I really enjoy salmon with Dizzy Pig Ragin' River Rub and butter and maple syrup. Simple to make and very delicious![p]TNW
