    dublin,
We got the recipe from The Barbecue Bible by Steven Raichlen. There is also another on his his book titled How to Grill, that I will also include.[p]Fire Roasted Apples
8 firm, sweet apples, likes Galas or Cortlands
4 Tbsp unsalted butter at room temp
    1/4 cup brown sugar
    1/4 cup dried currants
1/4 cup graham cracker crumbs, toasted bread crumbs, or ground almonds
    1/2 teaspoon ground cinnamon
    1/4 tsp. fresh grated nutmeg
    1 teaspoon vanilla
4 marshmallows, cut in half[p]1. Set egg up for indirect, and heat to about 325. Lightly grease a foil roasting pan. (its recommended to smoke with apple, or maple)
    2. Core the apples, but dont go all the way to the bottom.
    3. Cream butter nad sugar. Beat in currants, graham cracker crumbs, cinnamon, nutmeg, and vanilla. Spoon mixture into apples.Place half of marshmallow on top. Put into pan
    4. Cook about 40-60 minutes, or until the apples are soft. If the marshmallows start to brown too much, cover with a peice of foil.
Notes: we did not use currants, or nutmeg, and we used graham cracker crumbs. The first time we smoked with plum,it was too much. The second time, we just used lump. Much better results.[p]Smoke Roasted Pears or Apples
    6 pears or apples
    1/2 lemon
5 Tbsp butter at room temp
    5 Tbsp brown sugar
    5 Tbsp graham cracker crumbs
    1/2 tsp grated lemon zest
    1/2 tsp. ground cinnamon
    1/2 tsp ground cloves
    1 Tbsp. rum
1 tsp. vanilla[p]1. Cut a thin slice off the bottom of the pears, or apples so they sit flat. Remove the stem end in a neat inverted cone. Core fruit, but do not go all the way through. Rub the cut bottoms and tops with the cut side of a lemon to prevent browning. Squeeze a few drops into the cavity.
    2. Beat butter and brown sugar. Beat in graham crumbs, lemon zest, cinnamon, nutmeg, cloves, rum, and vanilla. Spoon into pears and loosely place the cap back on top. Put into lightly greased foil pan.
    3. Set up egg for indirect cooking and heat to medium. (Its recommended to smoke with apple, pear cherry or maple)
    4. Cook about 40 minutes until soft. [p][p][p]

dublin,[p]Here is another idea.......[p]Stuff the cavities with candy bars. I have used Snickers, Milky Way and 3 Musketeers. Follow the same techniques as Raichlen.[p]Stogie
