pw, Cook the ribs with it on, and eat is off![p]Hugh, "Sitting on The Dock of The Woods" I have never pulled the membrane off.

pw,[p]Thare are 2 methods that I know of..one slightly more complicated than the next...[p]1) Take a sharp knife, and make a small incision under a corner of the membrane, lifting it up slightly. This thing is more slippery than a snot on a doorknob..so get youself a napkin or paper towel..and use it to securely hold the corner of membrane you just lifted up, then gently peel back towards the other end of the rib. If'n all goes well, it'll peel back in one piece.[p]2) Get yourself a truffle pig and a truffle. Put the rack of ribs on the floor, make a small incision in the membrane at one end of the rib, and gently hide the truffle under the membrane, then at the other end of the rib, use a sharp knife to gently lift up the membrane slightly, and let loose the truffle pig on that end. It's amazing how fast that there truffle pig will route its gnarly old snout under the membrane, lifting it off in the process, to get at that truffle. You should get ready to stop the pig big before it eats the truffle...they're expensive..so no sense wasting a good truffle just tryin to get the membrane off of a rack of ribs. Now make sure you wash the ribs..you don't want em tastin like truffle pig snout![p]If I were you, I'd go with number 1.[p]Good luck![p]StumpBaby

Howdy Hugh
Gotta disagree with ya here! The membrane is pretty simple to pull off. A dull dinner knife slid under the 2nd or 3rd bone will loosen it up so you can get your fingers under it. Then, with the help of a paper towel, it can be yanked off in one piece.[p]Sure, you can eat around it, but personally, I like the flavor and crust of the rub to be on the meat instead of on the membrane. Easier to eat, tastes better, and easier to cut cleanly.[p]You aint the only one out east to still be awake! Wish I was standin on the "dock of the woods" myself. Drinkin a beer witchya....that I just grabbed from your red coke cooler...under the red chili pepper lights![p]Cheers

Nature Boy,[p]ahhh..Chris..it's such a long story...[p]It was the summer of 77 I think..I was just a small Stump then..not schooled in the wily ways of the world..even though I had the unique opportunity to go through 3rd grade more than once. I remember that we were across the street from our house, in the sand pit...in the middle of a viscious rock fight with the Flikwick twins, they were known across the county as the best rock fighters..winning more than once, the coveted Greenville Pebble Trophy. It was always a great feat, trying to defeat these 10 year old twin girls..they had the unique ability of repeatedly grabbing handfulls of crunchy pebbles..and whipping them out in windmill fashion...and you would ultimately find yourself succumbing to the hailstorm of tiny hard..intrusive pebbles.[p]I had been holed up behind a tree stump for nearly an hour, crouching down for dear life...periodically peering around the side of that stump..only to be beaned about the head, neck, and shoulders in a volley of crunchy pebbles..hearing the whooping sound of gleeful girls..it was the sound of victory my friend. It was about this time, I felt the pressure building..south of the border..the powerful..undeniable ..call of nature. I held on for as long as I could, and finally decided that something must be done. I slipped of my pants, only taking 3 rounds in the elbows, as they momentarily stuck out the side of the tree stump. I took off my underwear, and raised them into the air, as a sign of surrender...although I must admit I had reservations that they may not be white and pristine enough to be recognized as the international sign of surrender..the volly subsided, and I quickly dropped this flag, put my pants back on.. and made a run for the house.[p]As I made my escape, I took what can only be described as a direct hit, right to the most intimate of areas (for one second I cursed not having put the underwear back on .. I couldn't help but wonder if the extra protection may have helped )..curling over..and holding onto a most painful item..I made a run for the house..tears pouring down my cheeks. I'm not ashamed to admit I cried, and real hard..running up to the front steps, my nose was now running steadily, a side effect of the crying..and I reached over, ran my right hand across my nose, and reached for the doorknob..it was a sad thing, that doorknob..now slick from nose drippins..just turned and turned..meanwhile, the entire reason I gave up the fight..becoming more and more evident, in the form of pressure...building exponentially..until..[p]Right there..on the very doorstep of safety...the run I made towards the house was evidently in vein..there was a feeling of uncleanliness..yet in a sorta twisted way relief...2 minutes later, I was able to get my wits about me, as much as anybody can in this state, and I wiped my hand, on my panst..which at this point made little difference, cleaned the doorknob off..and walked slowly..gently....calculatingly..into the house..making my way..in bowlegged fashion..directly into the bathroom.[p]I panicked, not knowing how to handle the situation, took my pants off..and threw them into the clothes hamper..not even romoving a most effensive item, cleaned myself off..and went to the kitchen for a popsicle..now realizing..I had in fact been beaten again by the Flikwick twins. Some 20 minutes later, the meloncholy of losing to the twins, pared in camparison to the sight of momma coming around the corner with the laundry tub..getting ready to collect the laundry from the hamper. It was 2 minutes later, I realized that losing the rock fight was the least of my troubles...as I heard the sound of exclamation coming from momma quickly followed the sound of running water..and a string of cus words..that you can't even imagine..[p]How can such a small thing as a snot on a doorknob have such great consequences?[p]StumpBaby

pw,[p]I use a long nose pliers to grab one corner and pull. Generally it comes right off. Cleans up real nice.[p]Mike in MN

StumpBaby,
Again, not to troll for a StumpBaby story, but your method number 2 reminds me of the guy who would clean his chimney by pulling an angry duck through it with a rope tied to its leg. Yep, there's more than one way to get things done....

pw,
The best tool I have ever found and have told other people about is a fish skinner, it has that wide mouth on it and makes it real easy to skin ribs since you have a larger surface bite on the membrane than pliers. Makes skinning a piece of cake.

Hugh,[p]Nice to meet you the other day. Thanks for stopping by. And I'd love to check out your "dock" too.[p]But Chris is right ... you gotta get that membrane off ... it makes a world of difference.[p]Friday night beers,
Dave
