Blackened salmon

Hey all -
We made a top 10 item last night! Just had a couple of those frozen half salmon steaks from Sam's and I was thinking about doing them blackened. I only found some old posts here... but gave me some good ideas.
I setup for 500', elevated grid, cast iron pan preheated. Sprinkled dizzy pig swamp venom on each side (pretty decent coat), then dropped about 1 Tbsp butter in the cast iron, cooked 3 min per side (probably 3/4" thick salmon). Wow - really one of the best things I've cooked! I added a little bit of cherry chips, but I'm not sure they did anything on a 500' fire... but it's the thought that counts... :woohoo:
